The production process is divided into several precise steps, ranging from the very first selection and trimming to dry salting, maturing and the various checks, required by the PGI guideline. At intervals throughout the supply chain, there are moments dedicated to the massaging of the meat, to allow the uniform absorption of salt and aromas.
The slice results firm in consistency, it is compact, soft and fragrant.
The taste is subtle and the aftertaste is aromatic, recalling the seasoned meat, the spices and brine. Closing the sensory experience is the delicate scent of alpine landscapes.
