Lean lard with Herbs

100% ITALIAN pork lard, enriched with a portion of lean meat.
At first the lard has to be hand-tied and then placed in brine to absorb salt, aromas and spices. It is then laid on top of a thin layer of herbs, among which the italian parsley stands out, to cover the whole external surface.
After a period, the product is divided into smaller portions: the outcome on sight is a clean slice with a fully herb-covered outer surface.
The sweetness of the fatty part that melts in the mouth, combined with the characteristic taste given by the brine and the herbs, gives us a slightly aromatic and immediately recognizable cold cut. Wrap it around a grissini stick and add it to a cheese board to complete it.
