Lean lard with pepper

100% ITALIAN pork lard, enriched with a portion of lean meat.
At first the lard has to be hand-tied and then placed in brine to absorb salt, aromas and spices. It is then laid on top of a thin layer of ground pepper to cover the whole external surface.
After curing, the product is divided into smaller portions, the outcome at first sight is a clean slice with a fully, pepper-covered outer surface.
The result is the union between the sweetness of the lard, that melts in the mouth, and the characteristic taste given by the brine and pepper absorbed by the lean part. This makes our product an immediately recognizable cold cut.
