Pancetta Supercoppata

In preparing our supercoppata pancetta we use trimmed pancetta and pork neck. Salted, then rolled and tied tightly by hand, it is left to mature for 50 days. The slice is round, with a distinctive taste, typical of coppa. Being wrapped with pork belly, it leaves your taste buds with a softer and sweeter aftertaste. Often used in the kitchen to compliment many dishes, for example: many pasta dishes or chicken roulade.
